Ingredients
120g Oats ground down so looks like flour.
1 tsp baking powder
1 tsp vanilla essence
2 eggs
3 tbls honey
2 carrots peeled and chopped
2 apples peeled and chopped
30 g raisons
Method
Line an 8 inch tin with baking paper and grease the paper too
Preheat oven 180C
Whizz carrots and apple together.
Add to other ingredients and mix all ingredients together, stir well.
Spoon into tin and level mixture
You can if you want sprinkle chopped walnuts on the top before cooking.
Cook for 35 mins
Allow to cool and place on a rack
Enjoy!!

This recipe looks absolutely delicious and so healthy! It's such a great idea to use oats for the base and to add carrots and apples—it makes it seem so much more wholesome and comforting. I love that it's naturally sweetened with honey. I might have to try making this for a study snack!
